Third Falcon is a new restaurant in Fort Greene, Brooklyn. We were born from a background in fine dining and a particular love and appreciation for the culinary traditions and philosophy of French cooking, eating, and drinking. Think dinner at your French grandmother’s farmhouse on the Northern Coast. We’re coming in hot with some really special ingredients, honestly prepared to make beautiful, satisfying French cuisine... And in the French philosophy we want to drink great wine and have good fun doing it. About the Role:

We’re hiring a motivated, intelligent, and passionate Jr Sous Chef to assist the Chef and Sous Chef in leading and managing our team and culinary operations. An ideal candidate would have 2+ years in fine dining and kitchen management experience. We are searching for someone hardworking, organized, kind, and versatile with particular love and knowledge of French ingredients and cuisine. Key Responsibilities 

• Welcoming guests and communicating the essence of our style of warmth and hospitality as throughout the meal in a guest facing role.
• Thorough knowledge of the menu, wine and beverage list and a desire to collaborate on developing new dishes in a seasonally changing menu
• Self-motivated and highly organized, with the ability to self-manage multiple priorities simultaneously in a timely manner and manage others with grace and kindness
• Strong cooking experience with the ability to step in and assist at any station and with any mise en place prep 
• Make beautiful food and operate at the highest level of organization and cleanliness, show others how to do the same. Offer training and mentorship to cooks to help them gain a sense of belonging and knowledge.
• Maintain standards of cleanliness, urgency and quality

IDEAL QUALIFICATIONS

• Ideally 2 + years of experience in fine dining, bonus points for experience with and knowledge of French cuisine
• ServSafe or NYS food handlers certification
• Be able to manage the line and assure food quality, presentation and consistency standards are maintained during service

• Ability to build a rapport with guests in an ‘open kitchen’ setting, commitment to service quality, excellence, and sincere hospitality
• Have experience creating and maintaining prep lists, placing orders, and working with vendors
• Assist with BOH facilities maintenance and upkeep
• Excellent computer competency, well-versed in POS and inventory systems

• Ability to work in a standing position for long periods of time, tackle flights of stairs, and lift up to 50 pounds
