Buzz Bakeshop in Alexandria is looking for an experienced pastry sous chef!

This position includes, but is not limited to the following responsibilities:

Pastry and Confection Production Skill Set:

• Cake decorating including tiered cakes
• Mousses, buttercreams, glazes
• Cookie production, quick breads, biscuits
• Pie and cheesecake production
• Basic displayed desserts such as tarts, pastry creams, various bars, curds, meringue

Physical Plant Management:

• Manage daily kitchen activities, ie: inventory, cost control, labor management, production
• Ensure that the kitchen operates in a timely way that meets our quality standards
• Enforce kitchen rules and standards
• Ordering of ingredients and ensuring they arrive to standard and stored properly with the help of the team.

Employee Management:

• Personal and team time management
• Ability to organize and prioritize self and staff
• Train kitchen staff
• Maintain a positive and professional approach with coworkers and customers
• Maintain proper food and health sanitation
• Ensure orders and production are being produced to standards

Financial Management:

• Familiar with MarginEdge (Invoicing Software for ingredient pricing)
• HotSchedules- Inputting schedules
• Manage BlueCart and printing of Wholesale Invoices/Updating Invoices
• Costing/Menu Development
• COGs Management
• Assist in inventory as well as entering inventory
• Attend weekly manager meetings

Personal Management:

• Update production as new orders come in
• Organize and manage production/cupcake production
• Ensure orders are in production and completed on time
• Proficiency with all aspects of production
• Ability to cover all shifts at any time.
• Work weekends
• Ability to be flexible and help where it is needed
• Strong problem solving skills
• Oversee the activities of pastry staff and production while Pastry Chef is away
• Positive and “can-do” attitude
• Effective communication with Pastry Chef and Coworkers
• Ability to help with special events
